【舌尖上的真菌】奶酪块

配料:羊奶酪150克、蛋黄两个,蛋清一个,面包屑,“诺尔恰”黑松露80克、煎油、盐、胡椒。

把奶酪和蛋清混合后搅拌,直到变硬。加入松露粉末或细末和面包屑,面包屑的量足以让面团变软。混合一撮盐和胡椒。做成小球形,在面包屑里煎一下。和别的松露一起,趁热和松脆时送上餐桌。最好配上一杯冰的香槟酒。


Ingredients: 150 grams of sheep milk cheese, two yolks, one white, bread crumbs, and eighty grams of Norcia black truffles, frying oil, salt and pepper.

Mix the cheese with the egg white, and stir until they harden. Add the truffle powders and the bread crumbs, enough to soften the dough. Mix a pinch of salt and pepper, make the dough a small ball, and fry in the breadcrumbs. Serve with other truffles while it is hot and crispy. You had better serve it with an icy glass of champagne.
